Homemade pork fried rice: flavorful marinated pork tenderloin at the heart of every bite.
Ingredients:
  • 1 (12 ounce) pork tenderloin, cut into small cubes
  • 1 tablespoon dry red wine (such as Merlot)
  • 1.5 teaspoons brown sugar
  • 1.5 teaspoons honey
  • 0.25 teaspoon ground cinnamon
  • 3 tablespoons vegetable oil
  • 2 eggs, beaten
  • 2.5 cups cooked rice
  • 0.5 cup chopped onion
  • 1 cup frozen peas, thawed and drained
  • 1 cup bean sprouts
  • 3 tablespoons soy sauce
  • 0.25 cup chopped green onions
Instructions:
  • In a resealable bag, mix pork with soy sauce, red wine, brown sugar, honey, cinnamon, and garlic. Seal bag and massage to evenly coat the meat with the marinade. Let sit at room temperature for 1 hour or refrigerate overnight for optimal flavor.
  • Preheat the oven to 350°F (175°C) while saving the marinade in a cup. Place the pork on a rimmed baking sheet.
  • Roast pork in the flavorful marinade, rotating and brushing often, until perfectly cooked through, approximately 45 minutes. Ensure the pork reaches an internal temperature of at least 145 degrees F (63 degrees C) with an instant-read thermometer.
  • In a large skillet or wok over medium to medium-high heat, warm oil. Add eggs and cook until fluffy, about 3 to 4 minutes. Stir in pork, rice, and onion, cooking until the onion is translucent, around 6 minutes.
  • Top the fried rice with peas, bean sprouts, and a drizzle of soy sauce. Stir well and cook for about 5 minutes until heated through, stirring occasionally. Mix in the green onions and serve right away.
