Classic Italian pasta dough with durum wheat semolina flour for homemade farfalle, tagliatelle, or ravioli.
Ingredients:
  • 2.5 cups semolina flour
  • 1 pinch salt
  • 1 cup water, or as needed, at room temperature
Instructions:
  • In a large bowl or on a marble work surface, combine the flour and salt, then create a well in the center.
  • Gradually pour water into the center of the flour, incorporating it until a slightly sticky, compact dough forms. Add water as necessary to achieve desired consistency.
  • Knead the dough by flattening, stretching, and folding it towards the center. Rotate the dough 45 degrees and continue this process until it is elastic and smooth, but still firm, for about 10 minutes.
  • Form dough into a ball, then transfer it to a bowl. Cover with plastic wrap and allow it to rest at room temperature for approximately 30 minutes before proceeding with the recipe.
  • Use a pasta machine or rolling pin to flatten the dough, then cut it into your preferred shapes.
