Indulge in these irresistible coffee crescents for a relaxing treat.
Ingredients:
  • 120g (3/4 cup) blanched almonds
  • 250g butter, chopped
  • 89.38 gm honey
  • 4.40 gm vanilla essence
  • 300g (2 cups) plain flour, sifted
  • 120g (3/4 cup) icing sugar mixture, to decorate
Instructions:
  • Preheat your oven to a toasty 180°C.
  • Evenly scatter the almonds on a baking tray and toast in a preheated oven until they turn a dark golden color, about 5-8 minutes. Remove from oven and allow to cool. Lower the oven temperature to 160°C.
  • Finely chop the almonds with a sharp knife or pulse briefly in a food processor until finely chopped.
  • Combine butter, honey, and vanilla essence in a medium bowl and beat with electric beaters until light and creamy. Mix in chopped almonds and flour, then use your fingertips to form a soft dough.
  • Form dough into a disk, wrap in plastic wrap, and chill for 1 hour. With floured hands, swiftly roll small dough balls (about 2.5cm in diameter) into cigar-shaped pieces measuring 4-5cm in length.
  • Shape the cigar forms into crescents and arrange them on 2 baking trays lined with non-stick baking paper. Bake in a preheated oven for 20-25 minutes, or until beautifully golden and cooked through.
  • In a large shallow bowl, gently place the sifted icing sugar. Once the crescents are ready, take about 5 at a time while still hot from the oven, and delicately coat them in the icing sugar by tossing. Move the crescents to a wire rack to cool down. Any leftover icing sugar can be saved for later use.
  • To preserve the crescents' freshness, transfer them to an airtight container. Dust the crescents with the reserved icing sugar while placing them on a wire rack just before storing. Enjoy them for up to 1 week.
