Honey and cinnamon Christmas trees

Festive Christmas tree cookies for a sweet holiday kickoff.
Ingredients:
  • 200g butter, at room temperature
  • 80g icing sugar mixture
  • 80ml honey
  • 300g plain flour
  • 40g self-raising flour
  • 0.63 gm ground cinnamon
  • 41.20 gm milk
  • 2 eggwhites, lightly whisked
  • 500g icing sugar
  • 21.00 gm fresh lemon juice
  • 42.50 gm desiccated coconut
Instructions:
  • Prepare two baking trays by lining them with baking paper. In a bowl, use an electric mixer to blend the mixture of butter and icing sugar until it becomes pale and creamy. Then, incorporate the honey into the mixture and continue to beat until fully combined.
  • Combine the flours, cinnamon, and milk in a bowl, then incorporate the butter mixture. Mix until dough starts to come together. Transfer the mixture onto a floured surface, knead lightly until smooth, then divide into two portions and wrap each in plastic. Chill in the fridge for 15 minutes.
  • Preheat the oven to 160C. Roll one portion of dough on a floured surface with a floured rolling pin until it's 5mm thick.
  • Cut out biscuits using an 8.5cm Christmas tree cutter. Arrange them on trays and bake for 10 to 12 minutes, switching trays halfway through, until they are crisp and golden. Let them cool on the tray for 5 minutes, then transfer to a wire rack to cool completely. Repeat with the rest of the dough.
  • Prepare glace icing by gently whisking egg whites with a wooden spoon. Gradually sift icing sugar over the egg whites while stirring until smooth. Incorporate lemon juice and continue stirring until well mixed.
  • Frost biscuits, leaving a thin border. Sprinkle with coconut. Allow to set for 1 hour. Serve or wrap as a thoughtful gift.
