Family-favorite moist honey carrot cake with decadent honey cream cheese frosting.
Ingredients:
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 1.5 cups honey
  • 0.75 cup buttermilk
  • 3 eggs
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups finely grated carrot
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 cup chopped walnuts
  • 2 (8 ounce) packages cream cheese, softened
  • 0.33333334326744 cup honey
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13 inch baking dish.
  • Combine flour, baking soda, salt, cinnamon, nutmeg, and ginger in a medium bowl. In a large bowl, mix honey, buttermilk, eggs, oil, and 2 teaspoons of vanilla until smooth. Gradually add the flour mixture to the wet ingredients until fully combined. Gently fold in carrots, pineapple, and walnuts. Transfer mixture to the prepared pan.
  • Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely before frosting with cream cheese frosting.
  • Prepare the frosting by combining cream cheese, honey, and 1 teaspoon of vanilla until creamy and fully mixed. Spread evenly on the cooled cake.
