Decadent pecan pie with honey custard, vanilla, and bourbon.
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 cup shortening
  • 6 tablespoons cold water
  • 1 teaspoon distilled white vinegar
  • 4 eggs, lightly beaten
  • 0.25 cup packed brown sugar
  • 0.25 cup white sugar
  • 1 cup light corn syrup
  • 2 tablespoons butter, melted
  • 1 cup chopped pecans
  • 1 tablespoon bourbon
  • 0.33333334326744 cup packed brown sugar
  • 3 tablespoons butter
  • 3 tablespoons honey
  • 1.5 cups pecan halves
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • For the crust: Mix flour and 1 teaspoon salt in a bowl. Add shortening and blend until crumbly. Gradually add water and vinegar, blending until dough holds together. Shape dough into a ball, lightly flour each side, wrap in plastic, and chill for 20 minutes. Roll out into a 1/8 inch thick circle between wax paper and press into a 9-inch pie pan.
  • Combine eggs, 1/4 cup brown sugar, white sugar, 1/2 teaspoon salt, corn syrup, melted butter, vanilla extract, chopped pecans, and bourbon (optional) in a large bowl. Mix thoroughly and spoon into unbaked pie shell.
  • Once the timer goes off, allow the delicious creation to bake in the preheated oven for 15 minutes. Afterward, unveil the masterpiece and shield the delicate pastry edges with aluminum foil. Pop it back in the oven for another 20 minutes to achieve perfection.
  • Prepare the topping by melting together 1/3 cup of brown sugar, butter or margarine, and honey in a medium saucepan over low heat. Stir occasionally until the sugar dissolves, around 2 minutes. Then, add the pecans and stir until coated. Evenly spread the topping over the pie.
  • Leave the foil on the pastry edges and bake the pie for an extra 10 to 20 minutes until the topping is bubbly and golden brown. Let it cool to room temperature before serving.
