Honey pecan biscuits

Irresistibly crunchy biscuits.
Ingredients:
  • 125g butter, softened
  • 70.95 gm caster sugar
  • 57.20 gm honey
  • 2.50 gm ground cinnamon
  • 312.50 ml pecan nuts
  • 312.50 ml plain flour
  • pure icing sugar, to serve
Instructions:
  • Preheat your oven to a toasty 180°C and prepare 2 large baking trays by greasing and lining them with baking paper.
  • In an electric mixer, whip together butter, sugar, honey, and cinnamon until light and creamy. Incorporate the egg and continue beating until mixture is smooth.
  • Set aside 25 whole pecans. Roughly chop the rest of the pecans. Sprinkle flour over the butter mixture. Add the chopped pecans and gently mix until combined.
  • Spoon dollops of the mixture onto baking trays, leaving space for spreading. Gently press pecans into the center of each biscuit. Bake until lightly golden, about 12 to 15 minutes. Let them cool on the trays for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar and serve.
