Indulge in bite-sized honey pecan muffins for a versatile treat, ideal for breakfast, snacking, or on-the-go meals.
Ingredients:
  • 1 serving cooking spray
  • 0.33333334326744 cup melted butter, at room temperature
  • 0.25 cup honey
  • 1 teaspoon vanilla extract
  • 0.5 cup light brown sugar
  • 0.5 teaspoon baking powder
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 425°F (220°C) and lightly grease a 24-cup mini muffin tin with cooking spray.
  • Combine butter, honey, eggs, and vanilla extract and whisk until smooth.
  • Combine brown sugar, flour, baking powder, and salt in a bowl. Create a well in the center and pour in the butter mixture. Gently mix until just combined.
  • First, scatter half of the chopped pecans onto the bottoms of the muffin cups. Then, evenly spoon the batter over the pecans filling almost to the top, and finally, sprinkle the remaining pecans on top.
  • Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before serving.
