Elevate your Christmas roast with this flavorful side dish.
Ingredients:
  • 4 parsnips, peeled, cut diagonally into 3cm lengths
  • 4 carrots, peeled, cut diagonally into 3cm lengths
  • 18.20 gm olive oil
  • 57.20 gm honey
  • 11.80 gm wholegrain mustard
Instructions:
  • Preheat your oven to 180°C. Toss parsnip and carrot in a baking tray with oil, salt, and pepper. Roast in the oven, turning occasionally, for 25 minutes or until carrots are tender.
  • Combine honey and mustard in a small bowl by lightly whisking with a fork. Drizzle over the carrot mixture and roast for an additional 5-7 minutes until the vegetables caramelize. Remove from the oven.
  • Transfer the flavorful mixture of carrot and parsnip to a serving bowl and enjoy right away.
