Elevate your breakfast with this quick and fancy Honey Ricotta Stuffed French Toast recipe. Ready in under 30 minutes!
Ingredients:
  • 2/3 cup ricotta cheese
  • 1/4 cup honey
  • Zest from 1 medium lemon
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons butter, for cooking
  • 1 loaf French bread
  • 1 pint fresh berries, such as blueberries or raspberries, for serving
  • Syrup or honey, for serving
  • Powdered sugar, for serving
Instructions:
  • Combine creamy ricotta cheese, sweet honey, and fresh lemon zest in a small bowl to create the luscious filling. Set aside for later.
  • Make the custard: Combine eggs, milk, vanilla, and salt in a wide dish. Set aside.
  • Slice the French bread: Use a serrated knife to slice 4 large pieces (at least 1 1/2-inches thick) from the middle of the loaf. Cut the loaf at an angle to make larger pieces. Avoid the ends as they are too small. Use a small serrated knife to make a deep slit in the middle of each slice to form a pocket almost fully. A few tears are okay.
  • Evenly distribute the creamy ricotta filling onto each slice of bread, aiming for about 1/4 cup per slice. Embrace any overflow as part of the charm. Employ a small spoon for a neat and tidy filling process.
  • Melt butter in a large griddle or skillet over medium heat. Dip each stuffed French toast in custard mixture, ensuring all sides are well coated. Transfer directly to the hot griddle or skillet. Cook each side for 3 to 4 minutes until golden brown and crust is firm. Sear edges for thorough cooking.
  • Cut each piece of stuffed French toast in half and serve each person two halves, drizzled with syrup or honey, dusted with powdered sugar, and topped with a generous handful of berries. Serve warm to enjoy the best flavors and textures; don't worry about leftovers as they tend to get soggy quickly.
