Irresistible apricot bars filled with sweet fruit, honey, and oats. A treat you won't want to put down.
Ingredients:
  • 2 cups dried apricots (10 oz), chopped
  • 1/2 cup honey
  • 1/2 cup water
  • 1/2 cup apple juice
  • 2 tablespoons butter or margarine
  • 1 tablespoon lemon juice
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/2 cups quick-cooking oats
  • 1 cup packed brown sugar
  • 3/4 cup butter or margarine, melted
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
Instructions:
  • In a 2-quart saucepan, simmer all filling ingredients (except the egg) over medium heat for about 15 minutes, stirring occasionally, until slightly thickened. Transfer the mixture to a food processor, cover, and pulse for 10 to 15 seconds until finely chopped. Add the egg, cover, and pulse again until well combined.
  • Preheat oven to 350°F (or 325°F for dark or nonstick pan). Grease a 13x9-inch pan with shortening or cooking spray.
  • Combine all crust ingredients in a large bowl and mix until crumbly. Press half of the mixture onto the bottom of the pan. Spread the filling over the base. Sprinkle the remaining oat mixture on top and press lightly.
  • Bake until edges turn golden brown (25-35 minutes). Allow to cool for about 1 hour. Cut into 6 rows by 4 rows to make bars.
