Whip up a tropical crunchy snack with coconut, dried fruit, and honey for a delicious taste of paradise.
Ingredients:
  • 1/3 cup packed brown sugar
  • 1/4 cup butter or margarine
  • 1/4 cup honey
  • 1 teaspoon ground ginger or cardamom
  • 6 cups Rice Chex™ cereal
  • 2 cups bite-size pretzel twists
  • 1 cup unblanched whole almonds
  • 1 cup flaked coconut
  • 1 cup sweetened dried cranberries or dried pineapple
Instructions:
  • Preheat oven to 250°F and generously coat a large roasting pan with cooking spray.
  • Combine brown sugar, butter, honey, and ginger in a 1-quart saucepan and bring to a boil. Remove from heat and let it cool slightly. In a roasting pan, mix together cereal, pretzels, almonds, and coconut. Pour the brown sugar mixture over the dry ingredients and mix well to coat evenly.
  • Bake for 50 minutes, stirring every 15 minutes. Cool on waxed paper or foil for about 15 minutes. Transfer to a serving bowl and mix in cranberries. Store in an airtight container.
