Whip up a delicious berry tea cake in just 10 minutes for a taste of summer anytime.
Ingredients:
  • 1/2 cup canola oil
  • 1/2 cup granulated sugar
  • 1/2 cup honey
  • 2 teaspoons vanilla
  • 1 tablespoon baking powder
  • 1/2 cup milk
  • 1 cup fresh raspberries
  • Powdered sugar for garnish
Instructions:
  • Preheat oven to 350°F. Grease an 8-inch round pan with butter and lightly dust with flour.
  • In a large bowl, use an electric mixer to beat oil, honey, and granulated sugar until a smooth paste forms (about 3 minutes). Mix in eggs until well combined (about 1 minute), and then add vanilla. Gradually mix in flour, baking powder, and salt on low speed until just combined. Pour in milk and beat for about 2 minutes until smooth. Fold in raspberries with a spoon and pour the batter into the pan.
  • Bake for 50-60 minutes until a toothpick inserted in the center comes out clean and the cake is a caramel color. Cool in the pan for 15-20 minutes. Gently loosen the edge of the cake with a knife, then invert onto a cooling rack and onto a serving plate. Dust with powdered sugar and enjoy the cake right away.
