Transform rotisserie chicken with crisp veggies, mandarin oranges, and cilantro dressing into a delectable honey-sesame Asian chicken salad.
Ingredients:
  • 0.5 cup slivered almonds
  • 3 cups diced cooked rotisserie chicken
  • 0.5 cup chopped roasted red peppers
  • 0.5 cup finely chopped celery
  • 1 teaspoon sea salt, or to taste
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 1 cup mayonnaise
  • 0.5 cup chopped fresh cilantro
  • 3 tablespoons honey
  • 2 tablespoons sesame oil
  • 2 tablespoons grated fresh ginger root
  • 0.5 cup mandarin oranges, drained and chopped
Instructions:
  • Preheat a medium saute pan over medium heat. Toast slivered almonds in the pan until they turn light golden brown, then promptly transfer the almonds to cool.
  • In a large bowl, mix together chicken, red peppers, and celery. Season with salt and pepper, then toss gently until combined.
  • Combine mayonnaise, fresh cilantro, sweet honey, aromatic sesame oil, and zesty ginger until thoroughly mixed. Gently fold this flavorful dressing into the chicken, making sure it is well coated. Finally, add juicy mandarin oranges and cooled almonds, stirring until everything is perfectly blended.
