Make a batch of crispy honeycomb candy, perfect for gifting. Serves four.
Ingredients:
  • Light olive oil spray, to grease
  • 215g (1 cup) caster sugar
  • 80ml (1/3 cup) honey
  • 30.00 gm cold water
  • Pinch of salt
  • 5.00 gm bicarbonate of soda
  • 200g dark chocolate, coarsely chopped
  • 125ml (1/2 cup) pouring cream
  • 20g butter
  • 20.00 ml brandy (optional)
Instructions:
  • 1. Grease a 6cm-deep, 20 x 30cm baking dish with oil. Combine sugar, honey, water, and a pinch of salt in a medium saucepan over medium heat. Heat for 2 minutes, stirring, until sugar dissolves.
  • Turn up the heat to high and bring the mixture to a boil without stirring. Let it cook for 5 minutes until a sugar thermometer reads 145°C and the mixture turns golden. Take it off the heat and gently mix in the bicarbonate of soda. Pour the mixture over the pan base and let it cool for 2 hours. Break the honeycomb into pieces using a rolling pin.
  • Combine chocolate, cream, and butter in a small saucepan and gently heat over medium-low heat for about 5 minutes until chocolate is melted and sauce is smooth. Optionally, mix in brandy. Enjoy warm with honeycomb for dipping.
