Impressive and easy ice cream loaves.
Ingredients:
  • 2 litres vanilla ice-cream, softened
  • 2 x 50g Violet Crumble chocolate bars, chopped
  • 180g block white chocolate, chopped
  • 189.38 gm thickened cream
Instructions:
  • Prepare eight 3/4 cup-capacity non-stick mini loaf pans by greasing them and lining the base and sides with baking paper, ensuring a 2cm overhang around the edges.
  • Combine ice-cream, Violet Crumbles, and half of the white chocolate in a bowl. Mix well. Divide mixture into prepared pans, smoothing the tops. Cover with plastic wrap and freeze overnight or until firm.
  • Combine the rest of the white chocolate and cream in a microwave-safe bowl. Heat in the microwave on high for 1 to 2 minutes, stirring every minute with a metal spoon until smooth.
  • Transfer the ice-cream loaves to plates using baking paper. Drizzle with white chocolate sauce and serve.
