Honeycomb ice-cream muffins

Finish with sweet strawberries for an effortless and delicious dessert.
Ingredients:
  • 4 bought chocolate muffins
  • 400g (2 cups) good-quality vanilla ice-cream, softened slightly
  • 1 x 50g pkt honeycomb chocolate bar, coarsely chopped
  • 1 x 250g punnet fresh strawberries, washed, hulled, halved
  • Icing sugar mixture, to dust
Instructions:
  • Carefully carve out a 2.5cm-deep round piece from the top of each muffin using a small sharp knife, making sure to leave a 1cm-wide border.
  • Mix the ice-cream and crumbled Violet Crumble in a bowl. Fill each muffin with the ice-cream mixture, then place a strawberry on top. Sprinkle with icing sugar and serve right away.
