Celebrate the new year with a delicious bowl of Hoppin' John! This Southern dish made with black-eyed peas and rice is believed to bring good luck and prosperity.
Ingredients:
  • 1/3 pound bacon, or 1 ham hock plus 2 tablespoons oil
  • 1 celery rib, diced
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 2 garlic cloves, minced
  • 1/2 pound dried black-eyed peas, about 1 1/4 cups
  • 1 bay leaf
  • 2 teaspoons dried thyme
  • 1 heaping teaspoon Cajun seasoning
  • Salt
  • 2 cups long-grain rice
  • Scallions or green onions for garnish
Instructions:
  • Prepare the bacon by cutting it into small pieces and cook in a medium pot over medium-low heat until crispy. If using a ham hock, heat oil in the pot until hot. Increase heat to medium-high, add celery, onion, and green pepper, and saute until lightly browned, about 4 to 5 minutes. Stir in garlic and cook for an additional 1 to 2 minutes.
  • Combine black-eyed peas, bay leaf, thyme, and Cajun seasoning in a pot. Pour in 4 cups of water and add the ham hock if using. Bring to a simmer and cook until peas are tender but not mushy, adjusting time as needed based on freshness.
  • Prepare the rice according to package instructions while the black-eyed peas are cooking.
  • After the black-eyed peas are tender, drain them and remove the bay leaf. Taste the peas for salt and adjust seasoning if needed. If using a ham hock, take it out, shred the meat, and add it back to the pot.
  • To serve, spoon black-eyed peas over steamed rice or mix together in a large bowl. Top with chopped green onions and serve with collard greens, kale, beet tops, or turnip greens. Enjoy the dish and feel free to share your feedback in the comments!
