Spicy Hoppin' John made with bacon, black-eyed peas, rice, hot tomatoes, and jalapeños for a twist on the classic New Year's Day favorite.
Ingredients:
  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 small jalapeno peppers, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 (15 ounce) can black-eyed peas, drained and rinsed
  • 1 (10 ounce) can diced tomatoes with habaneros (such as RO*TEL® Hot), drained
  • 4 slices cooked bacon, chopped
Instructions:
  • In a large pan over medium heat, melt the butter until sizzling. Add in the onion, red bell pepper, jalapeño peppers, and garlic. Cook and stir until the onion turns translucent, about 5 minutes.
  • Combine cooked rice, black-eyed peas, diced tomatoes with habanero peppers, crispy bacon, salt, and black pepper into the vegetables. Simmer for 10 minutes to marry the flavors, stirring occasionally.
