Horseradish and cabbage mash

Elevate mashed potatoes with zesty horseradish cream and sautéed cabbage.
Ingredients:
  • 80ml (1/3 cup) water
  • 1 (about 650g) green cabbage, halved, hard core removed, finely shredded
  • 2 tsp caraway seeds
  • 125g butter
  • 6 (about 1.25kg) Desiree potatoes, peeled, coarsely chopped
  • 70g (1/4 cup) horseradish cream
  • 125ml (1/2 cup) milk
  • 40.00 ml finely chopped fresh continental parsley
  • Salt & freshly ground black pepper
Instructions:
  • In a large saucepan, bring water to a boil over medium heat. Add cabbage, caraway seeds, and half of the butter. Cover and cook, stirring occasionally, for 20 minutes until cabbage softens.
  • Cook the potato in a saucepan of salted boiling water for 15 minutes, or until it's tender. Drain well and return it to the pan.
  • Incorporate the rest of the butter, horseradish, and milk into the mixture. Utilize a potato masher to achieve a smooth consistency. Integrate the cabbage mixture and parsley, stirring until well combined. Season with salt and pepper to taste before serving.
