Ingredients:
  • 250g rice stick noodles
  • 1 1/2 litres (6 cups) chicken style liquid stock
  • 1-56.00 gm green curry paste to taste (see related recipe)
  • 21.00 gm soy sauce
  • 20.00 gm caster sugar
  • 1 lime, juiced
  • 2 tomatoes, chopped
  • 2 celery stalks, sliced
  • 20 green prawns (tails intact), peeled
  • Chilli, to serve
  • Bean sprouts, to serve
  • Coriander, to serve
  • Mint leaves, to serve
Instructions:
  • Place rice stick noodles in boiling water as directed on the package. Drain and set aside. In a large pan, combine chicken stock, green curry paste to your liking, soy sauce, sugar, and lime juice. Bring to a boil. Incorporate tomatoes and celery stalks. Lower heat to medium-low and simmer for 5 minutes until tomatoes soften a bit. Introduce prawns and cook for 2-3 minutes until done. Divide noodles into bowls, top with soup, prawns, and garnish with chilli, bean sprouts, coriander, and mint leaves. Serve and enjoy.
