Cozy up with this quick and flavorful Asian veggie soup.
Ingredients:
  • 1 small carrot, cut into matchsticks
  • 8 snow peas, cut into matchsticks
  • 2 green onions, thinly sliced diagonally
  • 2 button mushrooms, thinly sliced
  • 20.00 ml tom yum paste
  • 10.60 gm lime juice
  • 12.20 gm fish sauce
Instructions:
  • In a bowl, mix carrots, snow peas, onion, and mushrooms together. Separate the mixture into 2 snap-lock bags or airtight containers and store in the refrigerator. In another bowl, combine tom yum paste, lime juice, and fish sauce. Divide the mixture into 2 small screw-top jars or airtight containers and refrigerate.
  • In a heatproof bowl at work, combine 1 portion of vegetables and 1 portion of tom yum paste mixture. Pour in 1 cup of boiling water and stir until the paste dissolves. Let it sit for 1 to 2 minutes until the vegetables are tender.
