Spiced hot cross bun ice cream sandwiches - a delightful family treat!
Ingredients:
  • 75g caster sugar
  • 90g pecan
  • 60g unsalted butter, softened, divided
  • 1.88 gm ground cinnamon
  • 1L good-quality vanilla ice cream
  • 8 Indulgent Sticky Date & Butterscotch Hot Cross Buns, split
Instructions:
  • Chill a large bowl in the freezer. Lightly coat a large baking tray with cooking spray.
  • Evenly sprinkle sugar in a large frying pan. Cook over medium-high heat, occasionally swirling the pan (avoid stirring sugar) until caramel turns a dark amber color, about 6-8 minutes. Add pecans, 15g butter, cinnamon, and a pinch of salt.
  • Pour the mixture onto the tray, artfully arranging the pecans in a single layer. After cooling, chop the candied pecans into bite-size pieces.
  • Add ice cream to chilled bowl and fold in candied pecans gently using a large metal spoon. Place bowl back in the freezer for a minimum of 2 hours to solidify the ice cream.
  • Butter the cut sides of the buns and toast them in batches in buttered frying pans over medium heat until golden brown, about 1 minute each side. Repeat with remaining buns.
  • Place a generous ¼ cup scoop of ice cream onto each bun bottom. Top with bun tops and gently press down to evenly spread the ice cream to the edges. Serve immediately for ultimate enjoyment.
