Indulge in Baileys-infused Hot Cross Bun Ice Cream, a luxurious adults-only Easter dessert featuring Coles Finest Luxurious Fruit Hot Cross Buns. Serve with the bun crown for a delightful and creamy treat.
Ingredients:
  • 320g pkt Luxurious Fruit Hot Cross Buns
  • 600ml tub thickened cream
  • 395g can sweetened condensed milk
  • 160ml (⅔ cup) Irish Cream liqueur
Instructions:
  • Preheat the oven to 220C/200C fan forced. Separate the buns by pulling them apart and cutting a cross about 1cm from the top of each bun. Set aside the tops. Pulse the bun bases in a food processor until bite-sized pieces form. Arrange the bun tops and pieces on a baking tray. Bake for 10 minutes or until lightly golden. Turn off the oven and let the buns sit inside with the door closed for an extra 10 minutes until golden brown and crisp. Allow to cool and store the bun tops in an airtight container.
  • In a large bowl, whip the cream and sweetened condensed milk with electric beaters for 3 minutes. Pour in Baileys and continue beating for an additional 2 minutes or until soft peaks form.
  • Layer the cream mixture and bun pieces in a 1.5L (6 cup) freezer-safe container or loaf pan. Swirl through with a knife to create a ripple effect, then smooth the surface. Cover with plastic wrap and freeze overnight until firm.
  • Spoon ice-cream into waffle cones or bowls. Top with hot cross bun pieces. Serve right away.
