Hot cross bun jam doughnuts recipe

Easter-inspired twist on classic treats - Jam-filled hot cross bun doughnuts.
Ingredients:
  • 1 tsp instant dried yeast
  • 30.00 gm warm water
  • 107.50 gm caster sugar
  • 500.00 ml plain flour, plus extra for dusting
  • 1.25 gm mixed spice
  • 50g butter, melted
  • 84.98 gm milk, warmed
  • 1 egg, lightly beaten
  • 2.20 gm vanilla extract
  • 108.90 gm strawberry jam
  • Vegetable oil, for shallow frying
  • 82.50 ml plain flour
  • 40.00 gm water
Instructions:
  • In a small jug, combine yeast, warm water, and 1 teaspoon of sugar. Whisk until yeast is dissolved. Let it sit in a warm place for 5 minutes, or until the mixture becomes frothy.
  • In a large bowl, mix flour, mixed spice, 1/4 cup sugar, and a pinch of salt. Create a well and add the yeast mixture, butter, milk, egg, and vanilla. Stir until a soft, sticky dough forms. Transfer the dough to a lightly floured surface and knead for 2 minutes until smooth. Place the dough in a lightly oiled bowl, cover with greased plastic wrap, and let it rise in a warm place for 1 1/2 hours or until doubled in size.
  • Prepare 2 baking trays with baking paper. Deflate dough. Transfer onto a floured surface (add more flour if needed). Knead for 2 minutes. Shape into balls using 1 tablespoon at a time. Arrange on the lined trays.
  • Prepare a smooth flour paste by combining flour and water in a small bowl. If the paste is too thick, gradually add a small amount of water until you achieve the desired consistency. Transfer the paste into a snap-lock bag, then snip off a corner to use as a makeshift piping bag. Create a cross on top of each dough ball using the paste, then allow them to rest for 20 minutes to set.
  • 1. Put the rest of the sugar in a bowl. 2. Fill a piping bag fitted with a 7mm plain piping nozzle with jam. 3. Fill a large, deep frying pan with oil until it's 1/3 full. 4. Heat the oil over medium-high heat.
  • Fry doughnuts in batches for 1 to 2 minutes per side until golden and puffed. Drain briefly on paper towel-lined tray. Fill with jam, sprinkle with sugar, then serve warm or at room temperature. Enjoy!
