Winter's perfect dessert: Spicy, fragrant hot toddy pears.
Ingredients:
  • 2 Earl Grey tea bags
  • 80ml (1/3 cup) bourbon
  • 125ml (1/2 cup) honey
  • 2 large strips of orange rind
  • 1 cinnamon stick
  • 4 cloves
  • 4 just-ripe pears, peeled
  • Whipped cream, to serve
Instructions:
  • In a medium saucepan, bring 750ml (3 cups) of water to a boil. Add the tea bags, cover, and let steep for 10 minutes. Remove and discard the tea bags.
  • Combine bourbon, honey, orange rind, cinnamon stick, and cloves with the tea in a pot. Gently stir over low heat until honey dissolves. Increase heat to medium-high and bring to a boil. Add pears and reduce heat to low. Cover with baking paper and a lid. Cook for 45 minutes, turning occasionally, until pears are tender.
  • Place the cooked pears in a bowl and cover to keep them warm. Then, simmer the liquid over medium heat for 10 minutes, or until it thickens slightly. Serve the pears and reduced liquid with a dollop of whipped cream.
