Delight guests with these appetizer toasts at your next gathering.
Ingredients:
  • 100g frozen peas, thawed
  • 20g parmesan
  • 20.00 ml white vinegar
  • 2 tsp truffle oil
  • 1 baby cos lettuce, leaves separated
  • 680g packet ready-toasted bruschetta (see note)
  • 300g hot-smoked trout fillets, flaked
  • Mint leaves, to serve
Instructions:
  • In a bowl, pour boiling water over peas and let sit until tender, about 1 minute. Drain and mix in Parmesan cheese.
  • Combine tangy mustard, flavorful vinegar, smooth olive oil, and aromatic truffle oil in a small bowl, then season to perfection.
  • Arrange fresh and crisp lettuce leaves on top of the bruschetta. Add flaked trout, a flavorful pea mixture, and fragrant mint leaves. Finish by drizzling the ensemble with a delicious mustard dressing before serving.
