Impressive dinner table salad with make-ahead dressing for easy prep.
Ingredients:
  • 250g hot-smoked trout or salmon, flaked
  • 150g cherry tomatoes, quartered
  • 4 green shallots, thinly sliced
  • 2 small fresh red chillies, deseeded, thinly sliced
  • 1⁄250.00 ml fresh coriander leaves
  • 55g (1/3 cup) roasted salted cashews, chopped
  • 32.00 gm brown sugar
  • 40.00 ml rice vinegar
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • 1 tsp finely grated fresh ginger
  • 36.80 gm sunflower oil
  • 1 tsp sesame oil
Instructions:
  • To make the dressing, combine sugar, vinegar, fish sauce, lime juice, and ginger in a small saucepan over low heat. Stir and cook for 1-2 minutes until the sugar dissolves. Let it cool down before adding sunflower and sesame oil.
  • Combine trout, cucumber, tomato, shallot, chili, and coriander in a large bowl. Drizzle with dressing, toss to coat well, and top with nuts.
