Elevate your evening with this vibrant and textured salad starter.
Ingredients:
  • 300g smoked trout fillets
  • 125g bean sprouts
  • 250.00 ml fresh mint
  • 250.00 ml fresh coriander
  • 82.50 ml toasted unsalted cashews
  • 500.00 ml sliced Chinese cabbage (wombok)
  • 60ml lime juice
  • 36.60 gm fish sauce
  • 30.00 ml grated palm sugar or brown sugar
  • 2 tsp sesame oil
  • 1-2 small red chillies, thinly sliced (remove seeds for less heat)
Instructions:
  • Gently tear the smoked trout fillets into generous chunks and combine them in a bowl with the other ingredients.
  • In a small bowl, whisk together all the dressing ingredients vigorously until the palm or brown sugar completely dissolves. Add the chillies.
  • Drizzle the flavorful dressing over the fresh trout salad and gently mix until well blended.
