Ingredients:
  • 1 frozen  homemade pie crust
Instructions:
  • Preheat the oven to 350°F. Use a frozen pie crust straight from the freezer, not thawed. Ideally, let the pie crust chill in the freezer for at least 30 minutes, or better yet, an hour.
  • Prepare the frozen pie crust by lining it with heavy duty aluminum foil, pressing it firmly against the sides and bottom, leaving a few inches of overhang on two sides. Consider using stick-free heavy duty foil for easy removal without sticking. You might need two sheets to cover the entire crust.
  • Fill the pie crust with pie weights all the way to the top. Options for weights include ceramic weights, dry beans, rice, or white sugar. Sugar is a great choice as its small granules distribute weight evenly on the crust. This also lightly caramelizes the sugar, enhancing its flavor for future baking uses.
  • Bake the crust for a quiche until dry and just starting to brown, about 45-50 minutes. For a chocolate cream pie, bake until evenly browned and crisp, 60-75 minutes.
