Chef John's zesty San Marzano pizza sauce features aromatic oregano, savory anchovies, spicy chile flakes, and a hint of baking soda for balanced flavor.
Ingredients:
  • 2 anchovy fillets
  • 3 cloves garlic, minced
  • 2 tablespoons finely chopped fresh oregano leaves
  • 1 (28 ounce) can whole peeled tomatoes (preferably San Marzano), crushed
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon white sugar
  • 1 pinch freshly ground black pepper
  • 1 pinch baking soda
Instructions:
  • In a saucepan over medium-low heat, warm the oil. Add anchovy fillets and cook, stirring occasionally, until they start to sizzle, approximately 1 minute. Introduce garlic and sauté until aromatic, around 1 minute. Mix in fresh oregano and simmer on low heat until wilted, for 2 to 3 minutes.
  • Combine tomatoes, pepper flakes, and dried oregano in a pot and bring to a gentle simmer. Season with sugar, pepper, and salt. Reduce the heat to low and simmer, stirring occasionally, until the mixture thickens and oil rises to the top, for about 35 to 40 minutes. Lastly, stir in baking soda until well mixed.
