Introducing irresistible hush puppies - a must-try Southern delicacy! Enjoy golden, crispy polenta fritters with sweet corn and a touch of chili for the perfect bite.
Ingredients:
  • 170g (1 cup) polenta
  • 90g plain flour
  • 8.00 gm baking powder
  • 310ml (1 1/4 cups) buttermilk
  • 1 egg, lightly whisked
  • 100g (1/2 cup) fresh corn kernels
  • 4 spring onions (shallots), thinly sliced
  • 2 long fresh red chillies, seeded, finely chopped
  • Vegetable oil, for deep-frying
  • Chilli sauce, to serve
Instructions:
  • In a bowl, mix together polenta, flour, baking powder, and a generous pinch of salt. Add buttermilk and egg, then mix until just combined. Gently fold in corn, spring onion, and chili.
  • Pour enough oil into a large saucepan to measure 4cm in depth. Heat the oil to 160°C over high heat (verify readiness by observing a cube of bread turning golden brown in 30 seconds). Cook tablespoonfuls of polenta mixture in 3 rounds, flipping occasionally with a slotted spoon, until golden and fully cooked, about 2-3 minutes per batch. Reheat the oil as needed between batches. Transfer the cooked polenta to a plate lined with paper towel.
  • Season hush puppies with salt and serve with the chili sauce.
