Iced VoVo cheesecake slice recipe

Transform the classic Aussie Iced VoVo biscuit into a stunning cheesecake slice with this incredible recipe twist.
Ingredients:
  • 250g packet plain sweet biscuits (such as Nice)
  • 100g unsalted butter, melted
  • 200g frozen raspberries, thawed
  • 500g cream cheese, at room temperature, chopped
  • 140g (2⁄3 cup) caster sugar
  • 9.00 gm gelatine powder
  • 600ml thickened cream, plus 300ml, extra
  • 12.00 gm pure icing sugar, sifted
  • 105g (1 ⁄3 cup) raspberry jam Arnott’s Iced VoVo biscuits, to decorate
  • Coconut flakes, to decorate
Instructions:
  • Prepare the cake pan by greasing the base and sides of a 4cm-deep, 23cm square pan. Line it with baking paper, making sure the paper overhangs on 2 sides.
  • In a food processor, pulse the plain biscuits until they become fine crumbs. Mix in the butter until fully combined. Press the biscuit mixture evenly onto the base of the pan using a metal spoon. Chill in the refrigerator.
  • Puree the raspberries in a food processor, then strain through a sieve to remove seeds. In a large bowl, beat cream cheese and caster sugar until smooth, then mix in the raspberry puree.
  • In a small microwavesafe bowl, add 2 tablespoons of water and sprinkle gelatine over it. Let it sit for 2-3 minutes until gelatine softens. Microwave on High for 10 seconds (be careful not to overheat). Whisk with a fork until the gelatine dissolves. Allow it to cool slightly before mixing it into the raspberry mixture.
  • Whip the cream with electric beaters until soft peaks form, then fold it into the raspberry mixture. Spread the mixture evenly over the biscuit base and refrigerate for 6 hours or overnight until set.
  • - Take out the slice from the pan. - Beat the extra cream and icing sugar with electric beaters until firm peaks form in a small bowl. - Spoon the mixture into a piping bag fitted with a 1cm fluted nozzle and pipe over the slice to cover it. - Place the jam in a small sealable plastic bag and snip off one corner (or use a piping bag with a 5mm plain nozzle) to drizzle the jam over the top. - Decorate with Iced VoVos and coconut. - Serve by slicing.
