India Pale Ale Caramel Corn

IPA spiked caramel popcorn with a touch of garam masala for a festive twist.
Ingredients:
  • 8 cups popped popcorn
  • 1 cup cashews
  • 1/2 cup India pale ale beer
  • 1/4 cup packed brown sugar
  • 1/4 cup brown rice syrup or corn syrup
  • 3 tablespoons butter
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon salt
Instructions:
  • Preheat oven to 300°F. Place foil in two 15x10x1-inch pans and generously spray with cooking spray.
  • Place the popcorn and cashews in a large bowl; set aside.
  • In a 2-quart saucepan, simmer ale over medium heat until reduced to 1/4 cup, about 6 minutes. Double-check measurement by pouring into a glass liquid measuring cup. Return to saucepan and mix in brown sugar, syrup, and butter. Cook over medium heat until bubbly around edges, stirring occasionally.
  • Lower the heat to medium-low and continue cooking for about 5 more minutes, stirring occasionally, until the sauce thickens and becomes syrupy. Remove the sauce from the heat and gently mix in the garam masala and salt. Pour the sauce over the popcorn mixture in a bowl and toss until everything is well coated. Spread the popcorn mixture evenly in pans.
  • Bake for 20 minutes, stirring every 5 minutes, until mixture is caramelized. Let cool for about 1 hour, then break into pieces and store in an airtight container.
