Quick and easy Indian tikka masala: Chicken, garlic, ginger, yogurt, tomatoes, and curry paste.
Ingredients:
  • 1 (14.5 ounce) can chopped tomatoes
  • 4 tablespoons plain yogurt
  • 2 cloves garlic, roughly chopped
  • 1 (1 inch) piece ginger, coarsely chopped
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 tablespoons masala curry paste
  • 4 skinless, boneless chicken breasts, cut into 1-inch pieces
  • salt and freshly ground black pepper to taste
  • 0.25 cup water
  • 1 tablespoon all-purpose flour
  • 3 tablespoons chopped fresh cilantro
Instructions:
  • Blend the tomatoes, yogurt, garlic, and ginger until creamy in a blender.
  • In a large frying pan over medium heat, sauté onions in oil until soft, about 3-4 minutes. Stir in curry paste and cook until fragrant, about 1 minute. Add tomato mixture and chicken to the pan, mix well, then season with salt and pepper. Remove from heat.
  • Combine flour and water in a bowl, then stir into the chicken mixture in the frying pan. Bring to a boil over high heat, stirring constantly for about 5 minutes. Reduce heat to low, cover, and simmer until thickened, approximately 15 minutes. Garnish with fresh cilantro and serve hot.
