Make quick Indian lamb for dinner with smart hacks.
Ingredients:
  • 8 (100g each) lamb chump chops
  • 540g jar rogan josh simmer sauce
  • 500g bag frozen vegetables (carrots, cauliflower and broccoli)
  • Olive oil cooking spray
  • 4 plain naan bread
  • 82.50 ml fresh coriander leaves
  • Plain Greek-style yoghurt and
  • Mango chutney, to serve
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Heat oil in a large non-stick frying pan over medium-high heat, then brown the lamb for 2 minutes on each side. Remove from heat.
  • Prepare a large roasting pan by greasing it. Combine rogan josh sauce and frozen vegetables in the pan, then mix together. Add lamb and ensure it is coated in the sauce. Lightly spray with oil before baking for 20 to 25 minutes, or until the lamb is fully cooked and the vegetables are tender.
  • Moisten naan bread with a light drizzle of 1 teaspoon of cold water, then wrap it in foil. Bake in the oven for 6 to 8 minutes until perfectly heated through.
  • Garnish lamb with fresh coriander leaves. Enjoy with warm naan bread, yogurt, and mango chutney.
