Indian lime pickle

Zesty green limes from South-East Asia add vibrant flavor to a variety of dishes.
Ingredients:
  • 8 limes
  • 9.60 gm salt
  • 36.80 gm mustard seed oil (see note)
  • 2 tsp mustard seeds
  • 3 garlic cloves, finely chopped
  • 2cm-piece fresh ginger, peeled, finely chopped
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp chilli powder
  • 125ml (1/2 cup) water
  • 125g (3/4 cup, lightly packed) brown sugar
  • 40.00 ml white vinegar
Instructions:
  • Cut the limes into 8 wedges each and place them in a large bowl. Sprinkle with salt, cover, and let them sit in a cool, dry place for 2 days, stirring occasionally.
  • In a medium saucepan over medium heat, warm the oil. Add mustard seeds and cook until they start to pop, for about 30 seconds. Stir in garlic, ginger, cumin, coriander, and chili powder and cook until fragrant, about 30 seconds.
  • Combine the zesty lime mixture with water, sugar, and vinegar in the pot and bring to a boil. Lower the heat and let it simmer gently, stirring now and then, for 15 minutes or until the mixture reaches a thick consistency.
  • Transfer the mixture into clean, sterilized glass jars. Seal the jars and gently flip them upside down for 2 minutes. Allow the jars to sit undisturbed for 1 week to enhance the flavors.
