Easy one-pot coconut lime cilantro rice.
Ingredients:
  • 1 1/2 cups jasmine rice
  • 1 (14-ounce) can full-fat coconut milk
  • 1/2 cup water
  • 1/2 teaspoon kosher salt
  • A handful of cilantro, finely chopped
  • 1 lime, juiced
  • To serve
  • 1 lime, cut into 4 wedges
Instructions:
  • Place the rice in a fine-mesh sieve and rinse under cold running water until the water runs mostly clear, about 1 minute.
  • In a large measuring cup, combine coconut milk and water, stirring until smooth and well mixed, breaking up any big clumps of coconut fat while leaving some small clumps for texture.
  • In a medium 3-quart pot, combine the coconut-water mixture, rice, and salt. Heat on medium-high until boiling vigorously.
  • Simmer the rice on low heat, covered, for 20 minutes, stirring occasionally with a wooden spoon to prevent sticking.
  • Let the rice stand covered off the heat for 10 minutes. Fluff with a fork and mix in cilantro and lime juice to your liking.
  • Serve the dish hot or allow it to cool to room temperature, then serve with lime wedges on the side.
  • To store and reheat: Refrigerate coconut rice in an airtight container for up to 3 days. When reheating, break up any large chunks in a microwave-safe bowl. Sprinkle with 1 teaspoon of water, cover with a damp paper towel, and microwave for 1 1/2 to 2 minutes until warm. If you enjoyed the recipe, please leave a star rating below!
