Prep chicken wings with homemade Indian masala paste for bold spicy taste.
Ingredients:
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 0.5 teaspoon ground cardamom
  • 0.5 teaspoon hot chile powder
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground cloves
  • 1 tablespoon vegetable oil
  • 1 tablespoon water
  • 1 teaspoon salt, or more as needed
  • 5 large chicken wings, cut in 2, tips discarded
Instructions:
  • In a dry pan over low heat, toast coriander, cumin, cardamom, chile powder, pepper, and cloves until fragrant. Remove from heat and mix in oil and water until well combined to create a flavorful spice paste. Set aside.
  • Massage salt over the succulent wings in a shallow dish, then generously coat them with the aromatic spice paste. Cover and let the flavors meld in the fridge for at least 4 hours, or ideally overnight.
  • Preheat the grill to high heat and oil the grate lightly. Grill the wings, turning once, until golden brown and cooked through, about 15 to 20 minutes. Ensure they reach an internal temperature of 165°F (74°C) near the bone using an instant-read thermometer.
