Indian Spinach with Tomatoes

Indian-inspired vegetarian dish with flavorful spices, spinach, tomatoes, and onions for a quick, decadent dinner.
Ingredients:
  • 2 pounds fresh spinach
  • 0.75 cup ghee (clarified butter)
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger paste, or more to taste
  • 2 teaspoons chile powder
  • 2 teaspoons ground turmeric
  • 2 teaspoons garam masala
  • 2 teaspoons coriander seeds
  • 2 teaspoons ground black pepper
  • 1.5 teaspoons salt
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 (14 ounce) can whole peeled tomatoes in juice
Instructions:
  • Prepare the fresh spinach by washing, drying, stemming, and slicing into 1-inch strips.
  • In a large saucepan, melt ghee over medium-low heat. Cook onions and garlic until golden and soft, about 5 to 7 minutes. Lower the heat.
  • Mix in the ginger paste gently. Add chile powder, turmeric, garam masala, coriander seeds, peppers, salt, coriander, and cumin. Cook until fragrant for about 1 minute.
  • Toss in spinach until coated, then pour in tomatoes with half their juice. Bring to a vigorous boil, then simmer until spinach and tomatoes have cooked down, 5 to 10 minutes.
