Indian-style spiced chicken

Ingredients:
  • 315g (1 1/2 cups) basmati rice
  • 150g (1 cup) frozen peas
  • 20.00 ml garam masala
  • 3/4 tsp ground turmeric
  • 4 (about 125g each) single chicken breast fillets, trimmed
  • 9.20 gm vegetable oil
  • 40.00 ml chopped fresh coriander
  • 1 x 100g pkt pappadums
  • 100g reduced-fat natural yoghurt
  • 120g (1/3 cup) mango chutney
Instructions:
  • Prepare the rice according to package instructions in a large saucepan of boiling water. Add the peas during the last 5 minutes of cooking. Drain and keep warm.
  • In a plastic bag, mix together the garam masala and turmeric. Shake well to combine. Add half of the chicken pieces and toss to coat evenly. Transfer the chicken to a tray. Repeat the process with the remaining chicken. Let it stand for 10 minutes.
  • In a large non-stick frying pan over medium heat, sear chicken in oil for 3-4 minutes per side until perfectly cooked.
  • Incorporate the coriander into the rice by stirring.
  • Cook the pappadums in the microwave by placing 4 at a time on a microwave-safe roasting rack or upturned plate. Microwave in 30-second bursts on High/850 watts/100% until puffed.
  • Plate the flavorful spiced chicken alongside rice and peas, crispy pappadums, creamy yogurt, and tangy chutney.
