Vibrant vegetable pilaf with exotic spices for a delicious Indian twist.
Ingredients:
  • 3 tablespoons corn oil
  • 1 onion, finely chopped
  • 0.5 cup chopped red bell pepper
  • 3 whole cloves
  • 1 cup long grain rice
  • 4 cups water
  • 1 tablespoon salt, or to taste
  • 1 tablespoon cayenne pepper
  • 1 cup chopped fresh broccoli
  • 0.5 cup corn kernels
  • 0.5 cup fresh green beans, cut into 1 inch pieces
  • 0.5 carrot, chopped
  • 0.5 teaspoon ground turmeric
  • 1.5 tablespoons ground black pepper
  • 0.25 cup roasted cashews
  • 0.25 cup chopped fresh cilantro
Instructions:
  • In a large saucepan over medium-high heat, warm corn oil. Add onion, garlic, red bell pepper, and whole cloves. Sauté until onion softens and starts to brown, about 10 minutes. Stir in rice and cook for 1 minute, stirring constantly. Pour in 4 cups of water, salt, and cayenne pepper. Bring to a boil, then lower heat to medium-low, cover, and simmer until the rice is tender, about 20 minutes.
  • Place broccoli, corn, green beans, carrot, and 1/4 cup of water in a microwave-safe bowl. Cover and microwave until vegetables are tender, 2 to 4 minutes. Add cooked rice, turmeric, black pepper, and cashews. Stir gently to combine. Serve sprinkled with cilantro.
