Indulge in a cozy and comforting fruit crumble this winter season.
Ingredients:
  • 82.50 ml plain flour
  • 1/2 x 450g madeira cake, trimmed, cubed
  • 3 oranges, peeled
  • 131.25 gm orange juice
  • 82.50 ml lemon butter
  • 50g butter, chilled, chopped
  • 40.00 gm caster sugar
  • 21.25 gm desiccated coconut
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Spread cake pieces evenly among four 1 cup-capacity ovenproof dishes. Separate oranges into segments and place them over the cake. Drizzle with juice and finish by topping with lemon butter.
  • Prepare topping by combining ingredients in a bowl and gently rubbing together until mixture forms coarse breadcrumbs. Sprinkle over lemon butter, bake for 20-25 minutes, then allow to cool for 5 minutes before serving with cream, custard, or ice-cream.
