Quick and easy individual blueberry crumble - serves 2. Ready in under an hour.
Ingredients:
  • 2 cups frozen blueberries
  • 2 teaspoons almond extract
  • 1 teaspoon lemon juice
  • 0.5 cup all-purpose flour
  • 0.125 cup brown sugar
  • 0.125 cup white sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 stick cold butter, cubed
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Combine blueberries, sugar, almond extract, lemon juice, and vanilla extract in a bowl. Divide the mixture evenly into two 6-ounce ramekins.
  • In a separate medium bowl, combine flour, white sugar, brown sugar, cinnamon, nutmeg, and salt. Add butter and cut it in with 2 knives or a pastry blender until mixture looks like coarse crumbs. Sprinkle evenly over blueberry mixture.
  • Bake in the preheated oven for approximately 25 minutes, until the topping turns golden brown and the blueberries are bubbling. Serve either hot or at room temperature.
