Grill individual veggie pizzas with pesto, portobello mushrooms, zucchini, squash, broccoli, red onion, gorgonzola, and fontina cheese.
Ingredients:
  • 1 large portobello mushroom, sliced
  • 1 small zucchini, sliced
  • 0.25 pound butternut squash - peeled, seeded, and thinly sliced
  • 1 cup bite-size broccoli florets
  • 0.25 cup chopped red onion
  • 2 ounces refrigerated pizza crust
  • 0.25 cup pesto
  • 0.25 cup crumbled Gorgonzola or blue cheese
  • 0.25 cup fontina cheese, cubed
Instructions:
  • Preheat an outdoor grill until it reaches high heat.
  • In a grill pan, combine mushrooms, zucchini, squash, broccoli, and onion. Brush with 2 tablespoons of olive oil and grill covered until fork-tender, approximately 5 minutes. Set aside after grilling.
  • Roll out the pizza dough on a floured surface into two 8-inch circles that are 1/4 inch thick. Transfer the circles onto pizza pans and generously brush the tops with the remaining 1 tablespoon of olive oil.
  • Preheat the grill, then grill the dish covered until nicely browned, turning once, for approximately 3 minutes per side. Take it off the grill, spread pesto on top, add cooked vegetables, sprinkle with blue and fontina cheeses. Return to the grill, cover, and cook until the cheeses melt, about 3 minutes.
