Indonesian braised beef

Tender braised beef in flavorful Indo-inspired sauce with hearty potatoes for ultimate comfort food.
Ingredients:
  • 18.40 gm vegetable oil
  • 800g beef chuck steak, cut into 4cm pieces
  • 2 garlic cloves, thinly sliced
  • 5.00 gm ground cumin
  • 510.00 gm chicken style liquid stock
  • 62.50 ml kecap manis
  • 1 cinnamon stick
  • 4 roma tomatoes, roughly chopped
  • 550g desiree potatoes, peeled, cut into 3cm pieces
  • Steamed jasmine rice, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • In a large, heavy-based saucepan, heat oil over high heat. Brown the beef in batches for 5 minutes. Transfer to a plate.
  • Lower the heat to medium-high then add garlic to the pan. Sauté for 30 seconds until fragrant. Sprinkle in cumin and cook for an additional 10 seconds. Place the beef back into the pan, combine with the ingredients. Pour in the stock, kecap manis, cinnamon, and half of the tomato. Bring everything to a boil. Reduce the heat to low and let it simmer, partially covered, stirring occasionally, for about 1 hour until the tomatoes have collapsed and the liquid has thickened.
  • Combine the potatoes and 1 cup of cold water with the beef mixture. Simmer partially covered, stirring occasionally, for an additional 30 to 45 minutes until the beef is tender. Add more cold water if the sauce thickens too much. Season to taste.
  • Serve the flavorful beef mixture over a bed of fluffy rice, garnishing with fresh coriander and the rest of the tomato for a burst of color and flavor.
