Reynold Poernomo's comforting Indonesian ginger braised chicken is the perfect remedy for a cold.
Ingredients:
  • 36.80 gm grapeseed oil
  • 1 knob of ginger, sliced
  • 1 garlic bulb, halved
  • 1 brown onion, quartered
  • 8 black peppercorns
  • 2 bay leaves
  • 1 whole chicken, broken down
  • 1 carrot, roughly cut
  • 20.00 ml goji berry
  • Salt, to taste
Instructions:
  • In a medium pot over medium-high heat, heat grapeseed oil and sauté ginger, garlic, onion, pepper, and bay leaves for 2 minutes, or until fragrant.
  • Place the chicken pieces in the pot and pour enough water to completely cover them.
  • Bring the flavorful broth to a vigorous boil, then lower the heat to a gentle simmer for 90 minutes to allow the ingredients to meld together perfectly.
  • Simmer carrots for 30 more minutes, then stir in goji berries.
  • Season the broth to taste with salt once the chicken is fully cooked and tender.
  • Garnish with soy sauce, chopped chili, and serve with rice.
