Try this irresistible Baba Ghanoush with warm pita for a unique and delicious appetizer!
Ingredients:
  • 1 large eggplant, peeled and large diced
  • 6 cloves garlic
  • 4 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 0.125 teaspoon cayenne pepper
  • 1 lemon, juiced
  • 2 tablespoons tahini
  • 1 teaspoon salt
  • Pepper to taste
  • Reynolds Wrap® Aluminum Foil
Instructions:
  • Preheat the oven to a sizzling 450 degrees F.
  • Lay a large sheet of Reynolds Wrap® Aluminum Foil on a flat surface. Arrange the eggplant and garlic in the middle. Drizzle with olive oil and fold the edges to form a sealed packet.
  • Place the foil packet on a baking sheet and bake in the oven for 35 minutes.
  • Combine the cooked eggplant and garlic in a food processor along with cumin, cayenne pepper, lemon juice, tahini, salt, and pepper. Pulse until slightly chunky, about 7 to 8 times.
  • Serve with warm pita bread on the side.
