Vibrant, zesty rice with garlic, turmeric, cinnamon, and jalapeños - ideal with lamb kabobs.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 jalapeno peppers, seeded and minced
  • 2 cloves garlic, crushed
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground cinnamon
  • 2 cups uncooked long-grain white rice
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup water
  • 1 bay leaf
  • 2 green onions, chopped
Instructions:
  • In a large, heavy pan over medium heat, heat oil. Add onion, jalapeños, and garlic. Sauté until onion turns translucent, approximately 6 to 8 minutes.
  • Incorporate the vibrant turmeric and fragrant cinnamon into the mixture. Then, add the rice, stirring and cooking for 2 minutes. Next, combine the chicken broth, water, and bay leaf into the pot; allow it to come to a boil. Reduce the heat to low, cover, and let it simmer for 20 minutes.
  • Allow the dish to rest for 5 minutes off the heat, then top it off with freshly chopped green onion for an extra burst of flavor.
