Try a refreshing Italian fennel and feta salad for a quick and healthy side dish.
Ingredients:
  • 2 bulbs baby fennel, halved, green fronds reserved
  • 1 celery heart, including leaves
  • 10 radishes, trimmed
  • 2 witlof
  • 80ml olive oil
  • 42.00 gm lemon juice
  • 100g ricotta salata, crumbled
Instructions:
  • Thinly slice fennel, celery, radishes, and witlof using a Japanese mandolin or knife. Place in a bowl and drizzle with oil and lemon juice. Season with salt and pepper to your liking. Gently toss to mix, then top with ricotta salata and green fronds before serving.
